A great source of healthy fat, this avocado and herb salad could be a delicious snack or even a creative side salad to share at an event like your next barbecue. The avocados used in this dish contain healthy fats and more potassium than bananas, and are a healthy way to increase calorie intake when you find it difficult to eat.
Additionally, the herbs featured here can help reduce stress, nausea and gastrointestinal distress associated with cancer and its treatments. They can also provide support to strengthen the immune system. The oncology dieticians from the John Theurer Cancer Center who created this dish note that while herbs in supplement form should be avoided throughout treatment, recipes that include a variety of herbs and spices, such as this one, enhance both the culinary experience and your health and well-being.

Yield: 4 servings 2-3 ripe but firm avocados
1 lemon
3 green onions, thinly sliced
2 Tbsp capers
1 jalapeno pepper, minced (leave out seeds and membrane for a milder heat)
1 large handful of fresh cilantro, stems removed and rough chopped
1 large handful of fresh parsley, stems removed and rough chopped
Dressing
¼ cup extra virgin olive oil
3 Tbsp orange blossom vinegar or you favorite red or white vinegar
1 clove garlic, minced
Salt and fresh cracked black pepper• Slice avocado into thin slices and sprinkle with lemon juice to prevent browning
• In a medium bowl add avocado, green onions, capers, jalapeno and herbs
• In a separate bowl, whisk together olive oil and remaining ingredients; drizzle over salad
• Serve immediately with a fresh grinding of coarse black pepper
