Vegetable Tian
Makes 5 servings
Ingredients
1 tablespoon olive oil
1-1/2 cups diced yellow onion
2 teaspoons minced garlic
1 medium zucchini, thinly sliced
1 medium yellow squash, thinly sliced
2 medium red potatoes, thinly sliced
3 medium tomatoes, thinly sliced
3/4 cup shredded Italian cheese blend (any Italian cheeses will do)
Italian seasoning, to taste
Salt and pepper, to taste
