Cooking with CURE: Homemade Granola Bars Recipe

The "Cooking With CURE Recipe Series" continues with an easy and healthy snack recipe for granola bars to give you that extra boost in the day.

CURE® recently partnered with oncology dietitians from the John Theurer Cancer Center for this summer’s “Cooking with CURE Recipe Series”, and this week’s installment is a versatile recipe for granola bars that can be adjusted to your liking by simply swapping in your favorite nuts, dried fruit or chocolate — whatever you have in your pantry.

These bars contain all of the major food groups, and pack a nutrient and energy dense punch. They’re also high in fiber, and an easy snack to throw together and keep refrigerated in an airtight container for up to two weeks.

Homemade Granola Bars Recipe

Serves: 8

Ingredients:

  • ¼ cup chopped nuts (any variety)
  • 1 ½ cup rolled oats
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1/8 cup of honey
  • ¼ teaspoon vanilla
  • ¼ teaspoon salt
  • ¼ cup dried fruit
  • 2 — 3 tablespoons of dark chocolate chunks or chips

Instructions:

  1. On a greased baking pan add chopped nuts and oatmeal. Mix well.
  2. Bake at 350 degrees for 5 — 10 minutes or until browned. Flip halfway through.
  3. In a small saucepan mix together butter, sugar, honey, vanilla and salt.
  4. Combine wet and dry ingredients. Mix well.
  5. Add in fried fruit and chocolate.
  6. Transfer to an oiled dish and firmly press the mixture into the pan.
  7. Refrigerate for two hours.
  8. Remove the mixture from the pan and cut into eight bars.
