With all the extra time spent at home the past few months, you’ve probably made pancakes once or twice. But this fiber-packed recipe for chia seed oat pancakes from the oncology dietitians at the John Theurer Cancer Center will help you step up your pancake game and keep you full for hours.

Never used chia seeds before? Don’t be intimidated!

These delicious seeds don’t just pack a nutritional punch with their high omega-3 fatty acid content; they also help give the pancakes a fluffy texture. Plus, if you opt for non-dairy milk, this recipe is vegan.

Chia Seed Oat Pancakes Recipe

Serves 2

Ingredients:

½ cup rolled oats

½ cup flour of choice

½ teaspoon cinnamon

1 teaspoon baking powder

1 teaspoon vanilla

1 ½ tablespoon maple syrup (or sweetener of choice)

1 teaspoon apple cider vinegar

2 tablespoon chia seeds

½ cup milk of choice

Pinch of salt

Instructions:

  1. In a small bowl, combine chia seeds, milk, apple cider vinegar, maple syrup and vanilla. Mix well and let sit for 10 – 15 minutes.
  2. Meanwhile, add the flours and oats to a blender and pulse until ‘powder like’.
  3. Mix in cinnamon, baking powder and salt.
  4. Combine the wet and dry ingredients.
  5. Heat and oil a skillet.
  6. Add the batter to a hot pan and flip halfway through.
  7. Serve hot!
